Reviewed Pancetta and Cinnamon Waffles

"I used my own gluten free waffle recipe using quinoa flour & corn flour, but I took Giada's advice and added cinnamon and procuitto (I did not have pancetta). They were crisp and delicious. We used them like bread as a side the Baked Omlette recipe!!"

Reviewed Fusilli with Spicy Pesto

"The taste was good; lots of rich flavor. I used pecans in place of walnuts because I did not have walnuts in stock and I added a bit more garlic because I like garlic and I used a serrano chile because that's what I had in the fridge. I also used Red Chard & Green Leaf Lettuce in place of the spinach & arugula (because I needed to use them up). "

"Pretty cool. This is the first time I've ever made pot roast that I like. It is savory and tender and beautifully Fall-looking with the roast veggies. "LOVE IT! Delicious. I have to eat gluten free and loved this recipe. Thanks to Whole Foods, I found Nature's Path GF Corn Flakes. I may try it with rice crispy type (GF cereal too. I'm not supposed to eat dairy either, so I may substitute almond milk for the Buttermilk and just see how it works!

Oh, I did it with bone-in chicken, but no skin. I did not even miss the crunchy skin I usually cherish. This was tasty, crunchy, moist... delicious. I only marinated for 3 hours and it was packed with flavor. All I need to do next time is make my best collard greens and mashed potatoes!"

Reviewed Pumpkin Oatmeal

"Best Oatmeal EVER. I don't like oatmeal and neither does my husband. It was beautifully orange and spicily fragrant. This made 6 generous servings so my husband and I had it yesterday, reheated it today, and will finish it off tomorrow!

I bought Gluten Free Steel Cut Whole Grain Oats. I ground my whole cloves and whole green cardomom (without the shells. Oh, and I steamed a whole, small sugar pumpkin, then removed the skin and pureed it in my food processor. Next time I will use 1/8 teaspoon clove & 1/8 teaspoon nutmeg (instead of 1/4 teaspoon clove to see if I like that flavor even better. I may add a few more golden raisins next time too (my husband likes a few more raisins.

I took Aarti's suggestion and tried Maple Sugar as a garnish... love it! Also used almond milk as a garnish instead of cream.
