Reviewed Lemony White Bean and Arugula Salad
"This is a restaurant quality salad...the dressing is perfect, light because the lemon juice is balanced out nicely by the maple syrup. I didn't have capers when I began making this salad and I marinated the red onions and white beans in the vinaigrette while I ran to the store. It was good I wouldn't do that again. I can see where adding the onion at the end would give it a nice crisp bite like Giada recommended. Not that it needed it but I shaved some Parmesan cheese on top...delicious!
