These are the best suffed mushrooms EVER! I substituted local linguica, which is very similar to chorizo, but a little less fatty & a little less spicy. It can also be bought ground, so that saves a lot of time! I use cremini mushrooms because I think they have a lot more flavor than the white ones and I use whatever cheese I happen to have on hand....
