My Activity

Reviewed Three-Layer Carrot Cake

"Cooked the cake for 20 minutes, 10 minutes on each rack.. the cake was pretty dry.. I'd recommend lowering the time a bit and then checking for doneness until you figure out the right timing. The icing was delicious, but there was a lot of it. "

Reviewed Roast Chicken With Walnut-Herb Stuffing

"I agree with the previous poster that the stuffing will burn.. next time I may try move the chicken to one end and put the stuffing on the other end that way I can cover the stuffing with foil after it browns a little. I also didn't put the walnuts in the stuffing.. being burnt, it didn't taste that great. But the chicken was yummy!"

Reviewed Sugar Snap Peas With Leeks and Pancetta

"I used scallions in place of leeks and bacon in place of pancetta.. just going with what I had in the kitchen :) It was good. May try it with leeks and pancetta one of these days :)"

Reviewed Cocoa-Rubbed Steak With Bacon-Whiskey Gravy

"I used 1/2 bundle scallions instead of a leek since I had them on hand. I was also making this for two, so next time I will reduce the gravy recipe to 1/4, double the flour, and use 1/2lb steak. Steaks should be a medium rare when they come out of the pan. The time/heat in the recipe yielded well done steaks. I will have to reduce the time and/or "

Reviewed Steak Frites With Herb Mustard

"Very, very tasty.. my mustard was a little too runny though. Also had too many herbs for me, so I would either increase the mustard or decrease the herbs/water."

Reviewed Whole-Wheat Cornbread

"This cornbread was amazing..I almost ate the entire 'loaf'! I made some substitutions based on what was on hand - white instead of wheat flour, regular milk - and doubled the honey. I don't have a cast iron skillet, so I baked it in a springform pan. I also added butter and drizzled honey on top of the cornbread when it came out of the oven. YUM!"

Reviewed Slow-Cooker Ropa Vieja

"I didn't use the olives or olive juice (we don't like olives). I left the jalapeno seeds in the pot. I also felt the vegetables should be doubled OR the meat should be halved. And don't forget to SEASON the rice!"

Reviewed Chili Con Carne

"We LOVED this chili.. I did use Sriracha instead of hot sauce and red peppers vs green. DELICIOUS!"
