I love this recipe, but, after making it once again, I looked on Emeril's website, and the recipe is different, a larger quantity, but the ratios are not the same. Also, as far as the salt is concerned, I would keep it low, especially if you pre-salt your proteins. I do like to control the amount of salt, according to what I am cooking, for tast"
