Reviewed Baked Eggplant: Melanzane al Forno

This was a delicious, easy and quick recipe. Because I was using it for a main course, after I removed them from the oven, I layered it with a slice of tomato, grated cheese and parsley then put it back in the oven for 3 min. I served it with rice. Loved the skin left on the eggplant. It gave it a nice taste and texture. Great meat substitute....
