Reviewed Roasted Citrus-Herb Game Hen
"Loved this recipe! I didn't read it carefully, so made the entire sauce, but just rubbed that all over, inside and out, of a large roaster chicken. Placed it on a rack in the pan for more browning, and placed a cut lemon inside the cavity. Used the leftover for some homemade lemon chicken and veggies to go with the leftover baked brown rice accompanying our dinner. Will do this again. Imagine it might be great with a meaty fish, too.
Reviewed Olive and Sun-Dried Tomato Vegetables
"Neither of us is a big fan of zucchini or squash. Now we are! The tomatoes and olives, along with the herbs and good olive oil, make such a tasty dish. I used butternut squash, as I already had it, instead, and it was great. Barely any leftovers!
I do agree that you can reduce the olive oil considerably. I used about the half the required.
Reviewed Baked Brown Rice
"Been doing the brown rice thing for years, but sometimes hard to get the right consistency, and often takes forever. So easy, so delicious. A heartier consistency. Mixed it with vegetables and chicken. Will be my go-to rice forever.
