Reviewed Thai Chicken with Carrot-Ginger Salad

This is a nice surprise. I didn't have a roasting pan, but I added two cups of water to the bottom of a broiling pan and it worked like a charm. The chicken was incredibly moist on the inside, and crispy on the outside. Don't be afraid to leave it in the oven for 30 minutes...it made mine even more brown and crisp on the outside. I agree with the last reviewer. It was way too salty and the giardiniera added to that. I did try with diced honey ham, a little bacon and pineapple, and it was excellent."
