Reviewed Saffron Risotto with Butternut Squash

Amazing! My new favorite risotto recipe. It's especially great for fall/winter. I added some diced mushrooms to the saut��� to give an extra earthy flavor, and it turned out wonderful. I'm doubting whether or not the saffron makes a big difference in this recipe though, so I may try to exclude it next time, as it is a very expensive ingredient.

Made this with mushrooms instead of red peppers and swiss chard instead of spinach, and it came out perfect. Will use this recipe again as a base for other frittata ingredients."

Hmm...I wanted to love this but was disappointed in that I was expecting hummus and ended up with something of a hummus/salsa hybrid, leaning a little more on the salsa side. That being said, it had a good flavor. If you are looking for something DIFFERENT that hummus, this might be something to try.""

I followed this recipe to a T, and although they were delicious, they were not the least bit crispy. They were a hit at our SuperBowl party, and I'll probably make them again, but I'll use some hints to get them crispier next time.
