"I am very much lactose intolerance. I have to use fake butter and lactose free milk but even with those subsitutions these cupcakes were the best. I even used my butter in the frosting and I added a touch of butter flavoring(Wilton's clear butter flavor)and it was wonderful.
"I used regular carrots but cut them up. I thought this was a wonderful sidedish. The ginger was not overwhelming and it was just slightly sweet, which is a nice change. This will be made again and again in our house.
