I really liked this recipe, because others come out too heavy or doughy. They are light and crispy on the outside. the taste is like brioche.. So yes, a little more eggy. But we like this aspect, as its not too sweet, especially if you add syrup or fruit. These would go well with chicken and waffles!

Trying ti be healthier, I substituted almond flour for some of the white flour and reduced the amount of liquid. Added a dash of cinnamon and lemon zest. Tasted just like an oatmeal cookie! Will definitely make again. "

Very tasty. If you cant find Almond flour, try Whole Foods. I had to try twice on the meringue. Second time I used a little cream of tartar because the first time the crust was nice, but hollow in the middle. Second time, the crust was more pitted like the picture, but helpd up.
