"For those that are having a problem with binding issues make sure the potatoes are well drained mash them while they are hot but let the steam disappear before adding the butter (salt/pepper) and then mix. "It doesn't get any better then this I would give this ten stars if I could! Notice no breadcrumbs as filler! This is to die for. Great with grilled asparagus and/or a light mixed green salad. The only thing I do different sometimes is add some chopped celery and add cracked red pepper flakes to kick it up a level. I also make a chipotle mayonnaise to put on top of the cakes. You've got to try this if you love fishcakes. I've been playing with substituting some of the mashed potatoes with shredded potatoes but there's a little bit of a binding issue but still very good. The BBL -Basic Bottom Line is MAKE THEM you wont be sorry."
