I followed Alton's instructions exactly (except for putting pats of butter under the skin), and this was the best turkey we ever had!! I have to admit that the brine didn't smell that great to me, so I was a little worried. But just after 15 minutes in the oven, it already smelled wonderful! It also made the most delicious gravy.
