"I doubled the sauce and found it just a bit too much but if I hadn't it would have been not enough. Remember when you are making a dish like this, the vegetables should be served still crisp. It wouldn't kill it to add pineapple chunks or tomato wedges. Dust the chicken chunks in corn starch before cooking to give the sauce something to hold on to.""

"Scrumpdillyicious! I've just found my next recipe to make for guests! This was very tasty and pretty easy. I had to make a couple of substitutions cuz of what I had... I only had two tablespoons of horseradish and no chives so I substituted a heaping tablespoon of minced shallot. And I had no Madeira so I used a half cup of Cabernet Sauvignon instead. It was very good and the sauce was yummy! Served with garlic mashed yukon gold potatoes. I can't wait to try it with the sherry next time."

"Everything everyone else said...
*Took it to a barbeque and everyone loved it.
*It's very pretty with all the different colors.
*The few leftovers I had were even better the next day when the dressing soaked in.
*I usually hate pasta salad but was asked to bring one. I found this and thought I hit paydirt! I suppose you could substitute another kind of pasta, but the tortellini really brings another layer of flavor and texture to this that makes it special.

Reviewed Colorado River of Cheese and Macaroni

"This is my staple recipe for mac n cheese now! I've made it several times over the last year and a half and it always turns out perfect and everyone loves it.
Try it the first time and stick as close to the recipe as possible and then tweak it from there. Everything has a def purpose. But do be aware... the recipe as written makes ALOT of food. I've added bacon, mushrooms, chicken, and tomatoes. Everyone who tries it says "oooh try this'' or try that''. Its def a crowd pleaser.
DON"T use cooking wine like the previous poster, use a Chardonnay or Sauvignon Blanc. It adds a layer of flavor that really works. And it doesn't matter if you're a "drinker" or not (somebody actually said that once) the alcohol cooks off and you're left with a rich flavor.
This is the Mac recipe you need to try next!
