Reviewed Green Eggs and Ham

Based on my budget for the day I substituted Black Forest ham for the Prosciutto. These are so adorable when they come out of the form. I added finely chopped baby portabella mushrooms to the spinach mix for substance. Two eggs per cup make these very hearty, next time I'll try just one. Everyone gasped when I brought these to the table. This one "
