"Um, I'm no expert, but I'm pretty sure that's a picture of fennel, not artichokes. It even has the fennel fronds.

"I liked this dish, though I would reduce the water to maybe 1/4 C. or omit it completely, as the dish was watery (though I did use light coconut milk. Needs more salt, and with the collard greens I used instead of dasheen or spinach, I'd say the 8 C. of leaves much be packed. Also, I'd say this recipe yields 6 servings, not the posted 4.
