UPDATE 2014: I made this again, only going more by the recipe. I used half and half and shredded the carrots. I then pureed some of the soup before adding the cheese. It turned out very creamy and delicious. I';ll be making this again.

This is exactly the recipe I was looking for. It was my first time making potato salad homemade. I made a few minor tweaks: I only had dill pickles, so I used only those.
