Reviewed mushroom soup

Oct 30, 2014 on FoodNetwork.com

This was excellent, but did have to make some adjustments to lower fat content. Rather than haul out my food processor, just chopped mushrooms and sprinkled with lemon juice. I also used 2 1/2 cups chicken broth and 1 cup half and half instead of heavy cream, as well as fresh thyme - left out the bay leaf all together. Of course, this soup had...

Reviewed oh so good french onion soup

Oct 8, 2014 on FoodNetwork.com

Great recipe, but definitely needed a longer time to caramelize the onions. I used "Better Than Bouillon" beef stock, fresh thyme from my garden. Hubby loves it but plan a bit of extra time to caramelize the onions - the longer the better. Served with raw veggies and dip and sliced French bread, Really good on a rainy night.

Reviewed hearts of romaine with blue cheese and bacon

Sep 30, 2014 on FoodNetwork.com

This is excellent even without the egg (didn't have time to boil one). We use the artisan romaine (actually just small hearts of romaine from Costco) and our homemade blue cheese. This is so quick and always delicious. Just slice the small romaine in half (for 2 servings), sprinkle with bacon and let individuals put on their own dressing. My...

Reviewed sauteed kale

Sep 12, 2014 on FoodNetwork.com

Very good and quick as I had already washed and chopped the kale and refrigerated it from a previous meal. This was so simple and good. I did add extra garlic as we do like it and I omitted the vinegar completely. Hubby doesn't like a vinegar taste in anything. Served with crispy roasted potatoes, sliced steak, and sauteed mushrooms. Got an A+...

Quick and very good. I might add some sesame seed next time, but definitely a keeper. Thanks, Ellie.

Excellent - cayenne added the needed kick. I did not use bay leaves, but found it did need to use a bit more salt. Will definitely make again.

Reviewed old-fashioned banana cake

Mar 13, 2014 on FoodNetwork.com

Excellent, moist cake and the orange peel was a nice addition. I had only large eggs (not the extra-large called for) and still used only 2; cake still was excellent and received rave reviews from family and friends. A real keeper.

Reviewed Leftover Roast Beef Soup (Leftover Steak Too!)

Good flavor but way too many noodles; next time will use half as many, Great way to use a bit of leftover steak, but think it might be good even without the mushrooms and noodles. Thanks."

Quick, easy and delicious. Husband loved it too; definitely a keeper. Thanks, Ina.

Reviewed Grilled Eggplant with Garlic Sauce and Mint

Jul 14, 2013 in Food Network Community Toolbox on FoodNetwork.com

This was excellent. Used a bit more garlic and cooked on hot stove-top grill. Was a little dubious about the amount of vinegar but rice vinegar seems a bit milder and it worked well. I split first eggplant lengthwise into 4-5 slices, but cut second one cross-wise and think that worked better since I was able to get uniform slices without so mu"

Reviewed Gina's Perfect Roast Chicken with Gravy

Jan 8, 2013 in Food Network Community Toolbox on FoodNetwork.com

Delicious, moist and tasty "gravy", but chicken wasn't quite done near bone so next time think I will preheat the skillet, add the onions and bake for a little longer. I did add some cornstarch/liquid to thicken the sauce a bit. Think I'll try the soup with the leftovers as others have mentioned. Would definitely make again. thanks for a tasty"

Hubby often asks for "goulash" and loved this recxipe. Family really liked - added a little extra garlic and used tomatoes w/oregano and basil; used 1 1/2 lb 80/15 Angus ground beef. Definitely will make again. So easy in that no separate pans are needed for each step. This makes a lot so have enough for a meal, leftovers and to freeze a small "
