Very tasty! My family ate every bit of it. The ONLY thing I changed was that I used bacon grease in place of the olive oil. I also used ALL organic ingredients which "enhance" the flavors. I will be preparing this dish many more times........"

My husband & I TOTALLY enjoyed this recipe & we will certainly roast several more!
I used a "free range/organic" chicken.
I also used very "fresh" lemons & actually added a 3rd lemon, using 4 quarters in chicken.
DO NOT USE "OLD" LEMONS, IT WILL BE BITTER!!!!!
I only had one large Vidalia onion on hand, in place...
