I'm going to be making these tomorrow...I'm not an expert, but instead of putting the green beans in just cold water, I wonder if putting them in ice water would keep the beans from becoming too soft? These are absolutely AMAZING!!! I followed the recipe as is, except, used Panko bread crumbs and baked them on parchment paper ( as suggested by other who reviewed this recipe). I'm not into spicy foods and these weren't spicy at all...Just deliciously flavored with jalapeno. I made my balls using about a teaspoon of the mixture. Mine did flatten...

This was absolutely amazing!!! I made cupcakes instead because I took them to a party...It was just easier transporting them. They were delicious!!! Everyone else thought so as well. I cut the recipe in half which made over 18 small cupcakes. I will definitely make them again!!! Thanks, Ree, for another great recipe!!!"
