"This was absolutely delicious. The only modification I made was to let the carrots, thyme and stock mixture steep for over an hour on very low heat before I started cooking the beef. I also added about 2 extra heaping tablespoons of sour cream. Served with roasted carrots. "

"I baked this for a meeting my husband had to attend at work. Everyone loved it! I used a ceramic pan which required a baking time of 15-20 minutes longer. Make sure you put the foil on top to keep it from becoming too brown. Also let it sit for about 1/2 hour in the pan with foil on it before you flip it over. Don't forget to scoop out all of the delicious drippings that may remain after you flip it!"
