Time consuming, but very good. I cored out the bottoms with a spoon before cooking to get all of the seeds out (be careful not to break the pear), and just before serving filled the holes with mascarpone cheese..delish!"

SO DELICIOUS!!! After reading many of the reviews, I took some of the suggestions and soaked the fish in about 2/3 of the can of coconut milk for about an hour before cooking, added cayenne to the rest of the can for basting the fish, and added about 1/3 of a cup of coconut flakes to the crust.
