Reviewed Turkey Enchiladas with Fire-Roasted Tomatillos

I really liked this. My counter top looked like something exploded... but it was worth it.

I added a little more cheese that the recipe called for and as the others mentioned (which I didn't see until now) 2 limes was too many. It was very limey indeed. My veggies didn't brown as much as I expected, and I also was afraid of incinerating...

Reviewed Baked Shrimp with Tomatoes and Feta

This was really great. Definitely go for the fresh herbs, I wouldn't skimp there. I was looking for some added veggies so I did add some chopped zucchini as some else suggested (shortly after the onion). I also added baby spinach and spooned the shrimp over it. I topped with a little lemon. Really good!"
