Oops....I misread the directions. I cooked at 325 for 2.5 hours then an hour at 250. The roast was still very tender but a little on the dry side. The sauce made up for the dryness. With the leftover sauce, I added a little sugar and tomato paste. I used the sauce to make Paula Deen's Baked Spaghetti. Will use this recipe again but will fol"
