This is a very simple and tasty recipe. We had it with her meatloaf recipe for dinner this week (also a very good recipe).
I kept the potatoe skins and a few nights later I took the leftover mashed potatoe spread it back into the potatoe skins, topped with crumbled crispy bacon, sprinkled leftover irish cheddar cheese.
