These are the first caramels I've ever made and I've made them three times now. They are pretty easy to make and I go a little more than 240 degrees at the end so they're more chewy. Soo good I get requests for them often.

I made this for easter, my family said it was amazing. I stopped stirring the filling for a miniute and I thought I ruined it. It got so thick like peanut butter, but I added the lemon and butter and re-warmed it. It was the perfect consistancy. Even my Gma who makes the best cakes raved about it.

I always use nestle's recipe, but decided to switch it up, my bf loved them! I wish you didn't have to melt the butter and then refridgerate, has any one tried softened butter? I wish it could be sped up.
