Reviewed Gorgonzola and Porcini Mushroom Risotto

My husband has been making this risotto for well over 2 years and it is such an amazing dish! I LOVE every blue cheese there is, BUT after making this recipe the original way, we agreed to cut out the gorgonzola and add an extra 1/2 cup of the parm and 2 extra tbsp. of butter. This allows all the flavors to come out and nothing is overpowering. "
