This was a huge success for a dinner party! The cook time is a little confusing (as many reviewers before me have noted). I roasted it 15 minutes per pound, and the meat thermometer was right at 125. This was the worst recipe. So many misprints in the recipe, it's hard to know what's correct and what's not. Roast for "15" minutes? Should be 45! Using "two tablespoons" of cajun mustard is way too much. Should be two teaspoons. A complete waste of time and left me without a starch at dinner because it was completely inedible!"
