The custard for the cheesecake was great. I added 1 tablespoon of pumpkin spice like recommended in another post. I would agree that you should mix the gingersnaps with graham crackers or buy a ready made (graham cracker or Nila wafer crust). It was very succulent. My advice is to make sure that you don't spill canola oil on the bottom of the pan which will cause a lot of smoke and a burning smell during the initial roasting.
