Reviewed Fried Catfish topped with Crawfish Au Gratin Sauce
"In place of American cheese (can't find any here), I used an Italian mix (Asiago, Parmesan, Mozzarella, and Provolone). I also didn't have any green onions, and alas had no onions on hand at all.
