"I brined the chicken for around 7 hours and the chicken had a really good flavor. That being said, keeping the oil around 340 * my chicken crust was kind of burnt in places. I'm just wondering if not removing all of the thyme leafs could have made this happen. (Some chemical reaction to the oil ?) Another thing is this is really messy to make."
