Emeril's great. The duck is wonderful and easy to do.

However the instructions are thin: Be sure to score the duck, skin-side, prior to cooking. Also drain the fat before putting it in the oven. 10 minutes and the bird'll be over done if it's steaming in the rendered fat in the oven for that long, not to mention the smoke in...
