I love risotto. And this recipe is perfect for the fall. The saltiness of the bacon complements the mellow flavor of pumpkin. The hint of nutmeg adds more interest to the dish. You must try this recipe if you love risotto.

A refreshing spinach salad. The bite of the prosciutto adds enough punch without overpowering the spinach. Delicious as is, but my thoughts are: Would love to try the vinaigrette on fish and next time, I might add sliced egg for more protein.

By far, the best meatloaf I have ever made. Moist and delicious. Simple to make too. I think the key is to make the onion mixture correctly and to use fresh ground chuck. You need the higher fat content for this recipe. Thanks Ina.

This is a great 'macaroni salad' to bring to a picnic or a 'light lunch' to bring to work. Simple ingredients and very refreshing. I made the recipe as written, but since I love fresh herbs, added a 1/2 tsp of fresh thyme.

Quite tasty, without the all the fat and salt that you would get in pork sausage. I decided to roast my peppers and found that to work well in the dish. If you can't find ricotta salata cheese, you might substitute with feta cheese. (although it is not a firm cheese like the ricotta salata but it has the same 'bite' to it.)
