I have made this recipe twice, once leaving the cakes in the pans upside down overnight as directed, and once just letting them cool on wire racks for a couple of hours before frosting. Although the cakes left upside down were moister, it was not enough of a difference to justify the hassle of having cakes taking up counter space for a day. If I"
