I made this over the weekend and it was soooo good. I have never made potato salad because my husband won't eat it, but I thought I could win him over with this variation, and I did. The only changes I made were to use 1/2 butter and 1/2 olive oil to caramelize the onions. Forgot to get horseradish at the store, so I just threw a little hot sauce...
