"I made this over the weekend and it was soooo good. I have never made potato salad because my husband won't eat it, but I thought I could win him over with this variation, and I did. The only changes I made were to use 1/2 butter and 1/2 olive oil to caramelize the onions. Forgot to get horseradish at the store, so I just threw a little hot sauce in. I did have to thin the dressing with a little milk. We had friends over for dinner, so I made it all ahead of time and warmed the potato/onion mixture in the oven right before dressing and serving. My husband loved it, ate two helpings for dinner and more for lunch yesterday. This one is a keeper!"
