Reviewed Banana Muffins with Mascarpone Cream Frosting

"This might be the best banana muffin recipe I've made - and I make them a LOT! I skipped the frosting (although it does sound yummy. These muffins are sweet enough on their own. The only substitutions I made was 1 cup of honey in place of one of the cups of sugar, a splash of vanilla, and because I only had 3 bananas, I added a cup of applesauce. I did find the batter to be a bit too thick, so I added a little milk till it was the right consistency, but by far the yummiest muffins! I also pretty much always add 1/2 C to 3/4 C organic wheat bran for added fiber anytime I make muffins. YUM!"
