I followed the suggestion of roasting the potato's and the final dish was great. I used a champagne vinegar, since I had an open bottle handy. This is a very healthy recipe, (except for the bacon) that doesn't taste healthy. Going in the keeper file in my house. I didn't add any more EVOO at the end.
