This is the ultimate comfort food. I use an entire bottle of wine (cab sauv) and beef broth. I love how thick the sauce gets. It takes a while to cook the veggie mixture until it "cruds" - when I remember, I do the veggies in the food processor the night before and keep them in a strainer over a bowl to really dry them out. Delicious! Couldn't believe how tasty it was. I used more chipotle and didn't have oregano so I subbed cilantro. Also didn't add as much chicken broth.

Holy moly batman. I'm picky about my pork - I was a little nervous about this. My roast was 5 1/2 lbs. and I didn't increase the marinade. It was still unbelievable. After I took the pork out, I skimmed the fat off the sauce and returned the pork to the slow cooker. My 18 month old devoured it and my husband is in a food coma. Delicious!
