Having made this for years and loving the recipe, I decided to try the suggestion posted by a few reviewers of using V8 in place of tomato juice. A perfect brunch dish when hosting overnight guests. Easy to make while they sleep in. They thought I had been up for hours cooking. I served it with quickly grilled ham steak. I made these this morning for a party tonight. They are a tiny bit dry, which makes them perfect cocktail fare! I did not read the reviews prior to making them and added about 4 TBSP of cold cream (I doubled the recipe) to bring them together. Wonderful and I will make these again. "
