"Overall, a crowd pleaser. I generally avoid Paula's recipes as well, they aren't exactly healthy. I was intrigued by the combination of ingredients so wanted to try it despite the mayo. Which seems to be a Paula staple. I substituted low fat mayo, low fat sour cream and low sodium cream of mushroom soup and used a whole wheat panko bread crumb for the topping to try to mitigate. I don't typically have bone in breasts around so just poached and shredded some boneless breasts instead. I realized I didn't have any regular curry so used red curry instead and it worked out beautifully. I served it over a whole grain penne.
