"Yummy and crispy. I wrapped the potatoes in a dish towel and really wrung them out. For a little more heat, I added some sriracha to the butter and oil. I used a medium-high heat and cooked twice as long as recipe stated. Making these again this week."

"I've made this three times now. Easy and so good. I thought the everything bagel overpowered the frittata so I use either onion or plain. To feel less guilty ;-) I use egg beaters for half the eggs. Reviewed Gigi's Carrot Cake

"OMG, best carrot cake ever! This replaced all my others. I did substitute walnuts for pecans. Baked in 2 9" cake pans for 50 min (I live at a high elevation so you may be less time). I only frost the middle and top of the cake, leaving the sides bare. So good.

Reviewed Gigi's Carrot Cake

"OMG, best carrot cake ever! This replaced all my others. I did substitute walnuts for pecans. Baked in 2 9" cake pans for 50 min (I live at a high elevation so you may be less time and doubled the frosting because you can never have too much! My grandkids put the leftover frosting on graham crackers, so it did not go to waste.
P.S. I am updating my post on the frosting. I now only frost the middle and top of the cake, leaving the sides bare. So good.
