Reviewed Roasted Potatoes

Great, easy recipe! I didn't have yukon gold potatoes so used large red potatoes and quartered them twice. Also didn't have parsley, but had thyme (which was presented in the photo) and they were terrific. Had to bake close to 45 minutes at 400 degrees to get them browned and crisped.
