Reviewed Buffalo BBQ Pulled Chicken with Blue Cheese Cornbread Topper

"OMG - can I tell you this was AMAZING!!! I wasn't so sure when I was making it but the taste was out of this world! I used Rachael's 4.25 qt. casserole and it turned out perfect. I'm not a fan of bleu cheese and scallions so I left them out of the recipe. Although I'm a HUGE fan of cornbread, I'm trying to cut calories so next time I'm going to try to only use 1 box of cornbread mix. Since I prefer ranch to bleu cheese, I drizzled a little ranch dressing over mine when I served it. Wondering....hmm, how would adding a package of dry ranch mix in with the cornbread taste........hmmmm. To quote Rachael, "YUMMO"!! Both the 23-year-old son and husband raved about it. I AM allowed to make it again!!! :-) "
