Made these today for my husband's Birthday -- they were fabulous!!!! Just finished dinner and we cannot get enough of them! I tweeked a little -- instead of the cheese/salsa added Monterery Jack cheese. Instead of the tomatoes I added some tomato paste and tomato sauce. made the meat/rice mixture very moist.
