The burgers were juicy but they weren't as special as I thought they were going to be after watching the show. I made 4 huge burgers with 2 lbs. of 80/20 and they were so thick it took forever to cook them to medium doneness. I doubled the W sauce and hot sauce and next time I'll think I'll triple it. I took Ulala's advice and cut the Emeril's seasoning to 1 tbsp. and used low sodium soy sauce. This was the BEST flank steak we've ever had and the reduced sauce is amazing and so flavorful with just the right amount of kick. I have never had a bad meal at Emeril's restaurants and I've never made an Emeril's recipe that we didn't absolutely love."

We loved this! After pulling the pork and separating the fat from the drippings, I added the juices back to the pulled pork and it was amazing. Everyone liked the sauce just fine, but agreed that the pork didn't need it. It was flavorful and juicy. Thanks Emeril! ""
