I had high hopes for this recipe since I first tried a curried carrot soup a few months ago and found it delicious. Unfortunately, this soup wasn't even edible. I love these! The sour cream compliments it perfectly, especially since I like to add in one or two extra green chilies. I halved the recipe and found that the amount stuffed well into 10 corn tortillas (8' I think). The tortillas are really quick to cool down and crack, so I heat them in batches of 2-3 before filling."

The blue cheese was a bit overwhelming for me (not in a strong way, I just didn`t find that the apples balanced it out as well as they might have.
