Reviewed Spinach and Mushroom Lasagna Roll-ups with Gorgonzola Cream Sauce

"Loved this recipe! I used fresh spinach (a lot of it) b/c my store was completely out of frozen and it turned out great! The sauce is very thin but it didn't bother me at all. It does make a lot of sauce so I think next time I will just half the sauce portion of the recipe. Thinking about making this over the holidays as it can be an elegant dish for company.
