Reviewed Couture Caramel Apples

"The caramel sauce was delicious, but for the life of me I could not get it to thicken up enough to make a thicker layer on the apples. When she says let it cool a bit, you need to just chuck it in the fridge for 15 minutes or so.

They were good with the thin layer. I just wanted it to be thicker.

Reviewed Moroccan Chicken Tajine

"YUM!

Left out the preserved lemons. Served with couscous cooked in chicken stock and shallots. Added some pine nuts for crunch.

I totally agree with everyone about cutting WAY WAY back on the olives. You don't need 'em. The sauce all alone is delish.

Reviewed Butter Lettuce Salad with Crispy Prosciutto, Oyster Mushroom Chips, Cabrales and Pears

"Honestly appalled by the entry below me. One star? Really. This isn't a delicate salad...hence the prosciutto, cabrales cheese, and mushrooms.

This salad is about as close as you can get to perfection in my opinion. The mushroom chips are ingenious additions to this salad. Cheese...always a great addition. and the Prosciutto strips turn out so beautifully you almost don't want to eat them.

I will definitely make this salad for guests some time.

Reviewed Chicken Enchiladas

"DELICIOUSSSSSS!!

I only used one can of stewed tomatoes because I was trying to "halve" the recipe, but it still came out fine considering I used normal amounts of most everything else. I bought the enchilada sauce at Trader Joe's and was surprised at how good it is.

This is definitely a do-again. It didn't even really take as long as Bobby says.
