Reviewed Roast Chicken

Best roast chicken ever! I used a 5 lb chicken, olive oil instead of butter to make it a little leaner, and added a couple of cloves of garlic. I cooked it at 425 for 30 minutes, then 375 until my probe hit 160 degrees - at exactly 1 hr 15 minutes! It was perfect. Tender and juicy and flavorful. This one is definitely a keeper!
