I am a farmer and caterer. I work side by side with my son who is a chef. My pet peeve in the food industry are people that are militant "low-fatatarians". Live and let live you all. Get creative and make a low fat version that you can feel good about eating. Enjoy what you do and eat great local food. The fresh heirloom veggies and heritage poultry(heritage chicken, turkeys, duck, guinea fowl and quail) that I grow inspire me greatly when I am cooking in order to respect the animal or vegetable that has given it's life for us. It is all about respecting the food and preparing it with as much care and knowledge that is possible so it will become a memorable meal for family or friends.
Roasted guinea fowl with lemon and herb butter, Maine Lobster, crab--any type, taleggio gusto antico cheese, heirloom tomatoes, basil...and too many more to mention.
